Instructions
1: Preheat your oven to 350 degrees. 2: In a saucepot, add the coconut oil and let that melt over medium-high heat. 3: Add the sliced onions and let them cook for about 5 - 6 minutes, stirring occasionally. 4: Season the onions with salt and then add the coconut milk, ginger, garlic, curry powder, and tomato paste. 5: Combine all ingredients together and let cook for about 3 - 5 minutes, still over medium-high heat. 6: Add more salt and reduce the burner temperature to a simmer and cover the saucepot with its lid. 7: Bake your salmon in a shallow baking dish for roughly 28 - 30 minutes once the oven gets to 350 degrees. 8: To plate and serve, drizzle the salmon with the curry sauce and sprinkle with parsley.View original recipe
