1: Dice the salmon into cubes and add to a large gallon-sized plastic bag. 2: Pour the marinade ingredients into the bag as well and let the flavors infuse for a couple of hours in the refrigerator. 3: When you’re ready to cook, heat a large sauté pan over medium-high heat and add 1 tablespoon of the avocado oil. 4: Add the salmon to the pan and pan-fry until the diced salmon is golden brown on all sides. 5: Remove the salmon from the sauté pan, add the other tablespoon of avocado oil, and add the garlic, ginger, peppercorns, chili peppers, bell pepper, and salt. 6: Cook for about 2 to 4 minutes, then add the salmon back into the pan. 7: Pour in the Kung Pao sauce and toss the contents of the pan together. 8: Serve the dish with scallions and a side of cauliflower rice or actual rice if preferred.
